1 large lime (25ml juice), keep the squeezed fruit aside
Australian Black Limes ‘Black Lime Salt’
20 fresh Asian mint leaves, extra for garnish
12 medium ice blocks
500ml non alcoholic ginger beer (not ale) - Ingredients to make it a Cocktail
60ml dark rum
Directions
- Firstly, salt the rims of 2 whisky glasses.
- Rub the squeezed lime onto a plate to extract the last of the juice. Spread 1 tsp of Black Lime Salt on another plate. Gently slide the rims of the glasses through the juice then gently press the wet rims onto the salt plate until they are well coated.
- Next make the cocktail.
- Put mint leaves and lime juice into a deep mortar and pestle.
- Add a small pinch of Black Lime Salt.
- Gently bash the mint leaves until they are bruised. Transfer the leaves and juice evenly into the glasses.
- Place 6 ice blocks in each glass.
- Add optional rum.
- Pour 250ml of ginger beer into each glass.
- Stir with a long cocktail spoon.
- Garnish with a couple of mint leaves.
