About Us and accidental beginnings….

The startup of Australian Black Limes was an unexpected journey, sparked by a chance encounter with my neighbouring, humble farmer, who is full of curiosity and possibilities. This amazing woman, dropped a conversation into my heart and soul from just a few simple words.

It was a chance conversation when she approached me with excitement in her words as she said “Why not dry out the limes until they turn black and serve them like they do in the Middle East?” her words heightened all my senses that night and the “what ifs” conversations we have with ourselves. From then on, it’s sparked this incredible Startup journey we see here today, known as Australian Black Limes

Australian Black Limes are grown and dried using a dedicated program, exclusively developed for the drying of the citrus skin of the lime. Made in Australia on our sustainable, Off Grid Bethel Estate Family Farm in, Wanerie-Western Australia

The thought of transforming these ordinarily wonderful petite citrus fruits into something extraordinary, ignited a fire within my soul. I could almost taste the untapped potential and the promise of that unique flavour waiting to be discovered on our tables in Australia and around the world.

Days turned into weeks as we meticulously dried these vibrant green limes on our farm, with the all year round, fantastic seasons that Western Australia offers, similar to those warm weather Mediterranean days, we eagerly watched on as the lime skin changed from this vibrant hue and slowly faded, replaced by a covert shade of black. It was a transformative process for our family, both visually and emotionally, as we got to witness an extraordinary process, the start of something new for Australian agriculture and of something truly extraordinary for our family farm, creating generational growth potential.

The moment finally arrived when we held the first black lime, its appearance was incredible and captivating and fragrance was still there, it was intoxicating, the intricate layers of flavour locked within our limes were captured and with each recipe we’ve made using Australian Black Limes, the fruit has revealed its true depth of flavour—a symphony of tanginess, smokiness, and delicate sweetness that danced on the palate. It was as if ancient secrets from distant lands of the Middle Eastern had been unlocked, and a centuries-old tradition had found its new home in the heart of Australia

I’ve been experimenting with the amazing black limes and they really enhance flavours. So tonight I’m making a vegie, middle eastern curry and wool add the beautiful black limes. I think it will be a perfect cohesion of taste and flavour. Thanks Veronica for bringing this new taste sensation to our cooking. Love it!
