
Black Lime Chilli Aloo Gobi
Ingredients
- 2 tbsp olive oil
- 50g spring onions, sliced
- 10 fresh curry leaves
- 1 heaped tsp cumin seeds
- ยผ tsp asafetida powder
- 2 tbsp sesame oil
- ยฝ flat tsp Australian Black Limes โBlack Lime Chilli Powderโ
- ยฝ flat tsp Australian Black Limes โBlack Lime Powderโ
- ยฝ flat tsp garam masala powder
- ยฝ tsp turmeric powder
- ยฝ tsp coriander powder
- 1 tsp fresh ginger, finely grated
- 1 cup boiling water
- 250g potatoes, peeled, diced 2cm pieces
- 250g cauliflower, small florets
- 1 tbsp fresh lime juice
- salt
- 1 tbsp fresh coriander leaves, finely chopped
- 1 red chilli, finely sliced
- 4 lime wedges
Directions
- In a large frying pan on a medium heat sautรฉ spring onions, curry leaves, cumin seeds and asafoetida in olive oil for a couple of minutes. As the spring onions soften and the spices become aromatic pour in sesame oil.
- Add in Black Lime Chilli Powder, Black Lime Powder, garam masala, turmeric powder, coriander powder and ginger. Stir all together and gently fry the spices for 2 minutes, add more olive oil if needed to prevent burning.
- Stir in half of the boiling water to the pan to make a sauce.
- Add the potatoes and coat them well in the sauce.
- Place a lid on the pan and simmer on a medium heat until the potatoes are half cooked.
- Add the rest of the boiling water as needed so there is always some liquid in the bottom of the pan.
- Add the cauliflower and coat it well in the sauce. Put the lid back on and simmer until all the vegetables are tender but still hold their shape.
- At the end there should be very little liquid left in the pan.
- Add in the lime juice and season with salt.
- Serve Aloo Gobi in a bowl, garnish with fresh coriander and chilli. Serve with lime wedges.
